So, would milk in the Pros era not have been pasteurized? Pasteurized milk just spoils. It doesn't turn into edible fermented milk or anything else resembling cheese.

It was homogenised and pasteurised too - but there's still bacteria in it which means milk will definitely spoil and turn "cheesy" if it's been left for long enough (I've seen it - and smelled it...!) Bodie didn't mean it was literally fermenting and turning into cheese, it's just the sort of thing you might say if the milk smells off and is starting to look lumpy. And I definitely don't think he would have considered it edible in any way! *g*
